Cucumber and tomato season is finally here! This is the easiest salad to make, no lettuce to chop, wash and drain! Simply peel and chop the cucumber, chop the tomato into large pieces. I like to add a light dusting of salt to bring out the flavors and a little sprig of fresh basil for color and presentation (optional). It is so yummy and delicious it doesn’t really need dressing, but if you like dressing, keep it simple and make your own! We make our own salad dressing with olive oil, lemon juice, a little red wine vinegar and freshly pressed garlic. Just store in a bottle and shake before drizzling on. We use an old vinegar bottle with a tiny spout. Just a little is all you need! In an upcoming post, we will add some easy homemade salad dressing recipes.
If desired, additions to this already wonderful salad include feta or goat cheese, pistachios and red onion. This is a healthful, delicious, and low calorie salad to add to your repertoire!
